The Cabernet Sauvignon opens with a complex nose of blackberry, plum, blueberries, on the palate it's full bodied, rich and soft tannins with a long finish.
6-7 day cold soaks, 12-14 days of fermentation, aged 75% new French oak barrels. We harvested the Cabernet Sauvignon in two different times mid October and late October.
2021 was an ideal vintage. Moderate rain in the fall, that transitioned to a warm spring. The summer months were warm with no real heat spikes, which allowed the fruit to ripen in early to mid October. Although our yields were the lowest in recent years the quality was exceptional. This vintage is approachable upon release but also has great aging potential. Unfortunately, not much wine was produced in the vintage due to historically low rainfall, yet the quality is exceptional.
